Okay, I have a few more in my head. Not necessarily the most healthy, but they are good.

Potato Smashers
8 red potatoes, or new potatoes
4 slices bacon
1 cup shredded cheddar cheese
2 Tbsp Zesty Italian Salad Dressing

In microwave safe bowl, fill with water and put potatoes in water. Then microwave for 10-15 minutes (until potatoes are tender). Meanwhile in a pan, fry the bacon. Set pan aside when done (do not drain grease) and chop/crumble the bacon.
After potatoes are done cooking place them on a flat surface and with the bottom of a bowl smash them until they are 1/2 inch thick.
In the pan with the bacon grease, pour in Zesting Italian Dressing. Then place the potatoes in the pan. Cook over medium heat until lightly browned on each side. Top potatoes with cheese and bacon and melt the cheese. Ta Da!

Baked French Fried Chicken
2-4 Boneless, skinless chicken breasts, cut into strips. (depending on how many people you need to feed)
1 small can French's Fried Onions
1/2 Tbsp butter

Preheat oven to 400 F
Crush the French's fried onions. Place half in a baking pan. (like a 13x9 pan) Cut the butter up and sprinkle it in the pan on top of the onions. Place the chicken on top of the onions and butter. Sprinkle the remaining onions on top of chicken and then sprinkle remaining butter. Cover and bake for 15 minutes. Then uncover and bake 5 minutes (or until chicken is done).

OK, I have a new dessert I came up with. It's good, but really sweet...

Jenn's S'more Pie

Graham cracker pie crust
Milk chocolate chips
Miniature marshmallows

Preheat oven to 350 degrees. Place chocolate chips in crust (as many as you want) and cover with the marshmallows (again, as many as you want). Bake until the marshmallows are golden brown (took mine about 25 minutes, but I checked often). Eat it hot and fast or the marshmallows get hard. YUM YUM! This is a pie you won't want to throw. LOL!

Jeff and I just realized that to reheat it, you should microwave it for about 20 seconds! It's even better than when fresh out of the oven!

Here is a good one. Delicious!! I just finished making it so I wanted to post the recipe for you guys. Good for Breakfast, brunch, family gatherings, or just eating while playing TT!!

Honey Bun Cake
1 Yellow Cake mix
4 Eggs
2/3 cup oil
1 (8 oz) Sour Cream
1 Cup Brown Sugar
2 Tablespoons Cinnamon (or adjust to your taste)
1 Can Eagle Brand Sweetened Condensed Milk

Mix cake mix, eggs, oil and sour cream together well. Pour half of cake mixture into a 9X13 greased pan. Mix together brown sugar and cinnamon. Sprinkle over the first half of cake mix. Pour rest of cake mix on top. (with knife, marbleize) Bake at 350 degrees for 45-50 minutes. While warm, poke holes in cake with knife or fork. Pour Eagle Condensed Milk over top of cake.

We have made this dish since I was a kid. It is wonderful comfort food and is easy to make. You could also adapt this and put in a crockpot.

It's delicious to eat with baked pototes, vegtable and a salad.

GRANDMA PETREQUIN'S BROWN JUG

2 LBS HAMBURGER (MINUMUM FAT)
1 stalk celery, chopped fine
1/2 medium onion, chopped fine
1/4 precooked rice (left over or instant)
2 tsp salt
1/2 cup catsup
1 1/2 cup tomato juice

Preheat over to 350 degrees. Stir all ingredients well and pour into bean pot. Place in oven. Cook for 30 minutes. Stir it. Bake it for 15 minutes more.

A wonderful, healthy meal for the whole family to enjoy.

Homeade Chicken Pockets

This is one of my absolute FAVORITE recipies that I am sure others will love. First off, here is what you are going to need for your meal:

- Chicken, cut into individual strips

- Vegetables, Reccomended veggies: Onions, peppers, broccoli, string beans, and almost anything else that you would like.

- Terreyaki sauce, Barbecue Sauce, and Soy Sauce

- A box of Alluminum Foil

- Preset oven for 350 degrees.



This recipee includes children, so ask them if they want to help out with dinner tonight, and they will GLADLY say yes!

First, have someone cutting up the chicken. I would reccomend an adult to do this, or a child that is being closely supervised for caution. Make long strips, 1 or 2 for each family member.

While someone is cutting the chicken, have another person cut up the veggies.

After cutting the veggies and chicken, get out a big square of alluminum foil for each family member. Set the chicken in a big bowl with a fork next to it, and the veggies each in individual bowls. Set this up like a taco bar would be and have the family members come up and each take a peice of chicken, put it in their alluminum foil, and then set vegetables of choice on top of the chicken. Now, for the most fun part of the meal. Put whatever of the sauces that you would like on top! Barbecue sauce makes a smokey, more grilled tasting chicken (the sauce melts in the oven). For an oriental flare, try the soy sauce or terriyaki. But a word of advice, DO NOT PUT TOO MUCH SAUCE ON TOP. If you do, it tastes pretty bad because the chicken soaks in the sauce. After completing your chicken pocket, fold horizontally down on the foil 4 times, then roll the sides of the foil about 1 inch up. Now, put all of the families' creations into the oven (Not in the foil, it would burn. Put in a Cooking Tray or something of that nature). Cook for 10-12 minutes, and a family meal will be served on your table, without any hassle! Good luck with your Chicken Pockets!

I make fish baked in packets - but never thought to do other things! (Doh!)

For fish - any type you like will do! A little oil on the bottom of the foil, you can lay thinly sliced potatoes on the bottom, then fish fillet, then vegetables. We like minced garlic, onion slices, tomato slices, herbs. Drizzle a little more oil, salt & pepper to taste. Close up the packets and bake. It will take between 20-40 minutes depending on how thick the fish and how much is inside. Yum.

I'm going to make the chicken ones tonight!

My favorite crock pot meal I'm making tomorrow. Just jab a fork into the meat a few times on each side, brown it over low/medium heat for about 5-10 minutes (i use olive oil, or as Rachael Ray puts it "EVOO"), after it's brown, i season it with Lawry's Season Salt and pepper, put it in the pot along with the juice/olive oil from the pan, add an onion (sweet vidalia is the fave here), any squash you want (i tend to put a mixture of yellow squash and zucchini squash), mushrooms (my kids love the portabella), a couple of cloves of garlic, and about 1/4th cup of water. After about 2 - 2 1/2 hours, voila! Easy delicious meal with meat and vegies (I'm not a big potato person, but use those are really good too). It's one of the few things my picky boys will eat and they LOVE it! And SO easy!

Diet Coke Sloppy Joes

1 pound lean groundbeef
1 1/2 T flour
1 cup Diet Coke
2/3 cups ketchup
2 T vinegar
1 T worcestershire sauce
2 tsp dry mustard
1 med onion chopped

Brown beef and onions,drain well.Stir in remaining ingredients.Mix well cover and simmer 30 min.
serves 6
