From what I've experimented at this point, the only two real things that change are the acceleration of a kart, and the handling of a kart.
When in the cruiser, you accelerate at the same speed at all times. You'll go 0 to 60, for example, at the same pace. The cruiser makes sharper turns than the Roadster and the TUV.
When in a T.U.V, you accelerate slower at first, but then gradually gain acceleration. You'll go 0 to 30 at the same pace, which is slower than the Cruiser, but after you hit 30, you go to 60 at a faster pace than you went to 30, faster than the Cruiser. The TUV's handling and turning is nicely balanced - Not too sharp, and doesnt take too much effort. Perfect balance.
The Roadster accelerates fast at first, but accelerates slowly when you get into high speeds. You'll go 0 to 30 at a faster speed than the Cruiser, but when you hit 30 to 60, you'll go slower than the Cruiser. Turning is hard on the Roadster - And sometimes, I have to slow down to get a nice turn.
All karts have a "Maximum speed", and they're all the same. They all take different times to reach a maximum speed, but it all comes to the same number.
