Just like racing, you only have to have a two person match to get the win.

What I've seen happen, though, is when someone starts a match, and in the middle, it becomes clear that they are not going to win, they disconnect, thus robbing you of the win.

I think that if they disconnect before they start the first hole, fine. But, if they have started, and then disconnect, they should get a six for every hole. That way you don't get robbed of the chance to win just because someone else is a poor sport.

It is a lot faster playing with two and there are more wins per player that way too. If you are trying to get 3 laff points your best bet is to play with 2.

It only requires two players. There are 600 multiplayer completions required for trophy 21 and there are a total of 300 wins required (100 threes, sixes and nine holes) so even if a player isn't going to win the match it would be in their best interests to complete the match. Not only for the birdies, eagles, underpar shots and holes in ones but also because there are twice as many completions required with multiplayers then wins. Toons who don't complete matches are not doing themselves any favors but doubling their workload.
