Chicken for a few reasons...
1) You can think up alot more creative names for chickens. 2) They'd probubly look really cool, I mean a toon as a chicken? :O 3) Their sf chat noises would sound weird, LOL.

 I think a cow might be the only toon species I would make besides a dog.Out of those, chicken.
