Something to share

I wanted to share this with everyone here. Since all my friends are in CCG, and the intended audience is CCG, I am postin here. I have been working on a project outside of toontown lately. I have promised to share a sampling of my recipes that I am compiling, and so here it finally is! This is only a few of my all time favorites, I have hundreds more I am still compiling, testing and tweaking.

Please forgive the typos you may encounter in the recipes. I am using software that forces me to actually print the recipes first, then I scan them to an html file (export will not work, its a proprietary program). In this process, some of the fonts have been changed and a few numbers are replaced with symbols. If you need proper translation of something I missed, please let me know. I will be happy to send you a copy of that specific recipe. It is my hope that you will let me know what you think of the layout and directions. I have tried several different approaches since I have not quite decided on the format that suits me best.

It is my hope that you enjoy the recipes as much as my family has over the last several generations. Please, try them and let me know what you think, I would welcome the suggestions!

Those look awesome!!!!!
I wonder if they can be tweaked for soy and rice flour.
Me and 2 of my children have Celiacs disease, that of course is allergy to wheat, rye, barley and oats......
I may try a couple of your recipes and substitute with rice flour and see how it turns out!!

I know there are some really good sites out there with information on susbtitutions you can use. Try a search on 'flour substitutes for celiac recipes" or something along those lines. Although, I'm sure you're probably used to having to adjust recipes etc already. Good luck - my aunt has lived with Celiac disease for many years - when she was first diagnosed it was rarely heard of.

Thanks for that!! It's hard to live with because everything has flour dumped in it because its cheaper. We never go to restaurants and have to buy organic everything! It's harder on my kids than me, I just choose not to eat LOL, for them pizza and stuff........... that's a staple for them and they can't have it..... It's horrible to live with. It's becoming a bigger problem in the US than once thought. Kinda scary and sad. You never realize how many events in life are based around food. Me and my oldest son just sit and watch everyone eat and we take Dove Darks with us to munch on LOL

THANK YOU! I already planned to research and tweak several for Kosher cooking, since half of the family is Jewish and Passover restrictions eliminate flour and leavening agents. Now, I will also look for possible substitutions on this! I only have known one person in my life to have wheat and flour allergies, I didn't realize it was more common than that.

I know that my aunt uses special pastas and converts a lot of recipes - she spent a LOT of time researching - I'm sure with some good searches you can find a great deal of helpful and SUPPORTIVE information. I bet you can find a lot of gluten free things online now.

Again, good luck. If I find out anything useful from my aunt, I'll let you know - can't just give her a quick call right now, she's in Australia, but I'll try to remember to send her an email and see if she has any good links for ya!

My mother-in-law also has Celiacs disease. I know it is extremely frustrating for her, esp. trying to go out to restaurants. The most recent thing that happened was we all went to the Spaghetti Factory, which has on its menu gluten free pasta. She was so excited to be able to eat there so we went. Well, she asked if the eggplant had breading on it and the waitress told her no, it didnt. She explained she had Celiac and it was dangerous to eat any flour. The waitress still insisted it was not breaded. So we both ordered the eggplant-I noticed it had breading and we asked the waitress again. She went to the back and came out with the manager who told us it did indeed have breading. (Of course-she had already eaten some of it.) They made her a new one without breading-by that time she was too full to eat it and asked for a to-go container. The next day she called me and told me that they had put regular pasta with it. lol. She gets so tired of trying to explain to the waiters. People just dont understand that it isnt just a dietary preference-but a dangerous disease. She always gets sick after she comes in contact with gluten. Hers went undetected for a long time and she had a lot of damage. Im sorry you and your kids have to deal with it. :-( You are right, life really revolves around food. And you are right that Celiac is probably way more common than people realize.

OMG for your aunt. How frustrating People do not realize how much damage it really does do. I have pretty severe anemia, it is finally going up, but if I don't take my iron, it plummets pretty quickly and I feel awful for 6 weeks til I rebuild it.
I also at 34 years old, am close to having Osteoporosis. Have to take Fossamax and extra calcium.
It's almost like even though you eat, you are malnourished.
Recently I had to have a crown put on and the adhesive she used had gluten in it. I was so sick for about 2 mos. Very, very sick. She wouldn't let me spit, I haven' t a clue why, so down it went and UGH, my stomach hurt, my iron dropped, I broke out in a rash.
I never trust anything people at restaurants say. I will say at Cracker Barrel they know me and when I go in there, they clean the grill and set me up nicely!! I never have a reaction after eating there and always leave them a very, very huge tip!!

PS I read on the Celiacs board, that they have developed an enzyme that you drop on your food and it counteracts the effects of the gluten. Therefore you would be able to eat regular foods. It has to be FDA tested and probably 2 years away, but hey!!
I live by, if it sounds to good to be true, it probably is........But we can all hope!!!!
