I mean that when you fall off track, the game does not get any new data on whether you should be going up/down or be leveled, so the game then goes by the last data it recieved, which in those pictures was slightly going down.
To make a long story short... if fall off up, you go up. If you fall down, you go down.

You can try asking Disney the reason. I'm pretty sure I remember them saying they were easter eggs, as you do really have to pay attention to the toons to see it.
I don't think that beta people being able to pick glove colors was part of it, as the NPC toons aren't created from Make-a-Toon like the rest. If(and hopefully) they put Roger Rabbit in the game, he would also have yellow gloves.
After thinking about it for awhile, the ability to pick colored gloves may have been a glitch from changing your toon's color, but I'm not sure because I'm too lazy to find the picture of it to check right now.
