If I buy & upgrade to the new poles as fast as I can, when I have a gold rod will I find out that I'm not able to catch all of the possible species because certain species are only able to be caught with weaker poles? I don't want to miss out on catching all the species. (I don't care about fish weight's) Thank you for your help

Are there species that I can only get with certain poles? Yes, it depends mostly on weight it seems. Certain poles can catch certain weights of fish. The bigger the fish, the bigger the pole you can need.

No, with a gold rod it is possible to catch ALL types of fish, but we have discovered from Disney, that since you can catch ALL types of fish with a gold rod, the likelihood of you catching the more rarer species of fish is lessened. It's like this: If you put 2 fish in a pond, 1 guppy & 1 catfish, well it's pretty likely that you'll catch one or the other given a little time. But if you put 200 bass in the lake with 1 guppy & 1 catfish, it's more likely that you'll catch the bass that it would be to catch that 1 guppy or catfish. So my suggestion to you is to use the twig rod as much as you can, catching ALL the fish you can with the twig. Then when you've caught ALL the fish you can with that, THEN upgrade to the bamboo rod. Basically, don't upgrade your rod (because you can't go back) until you've caught all the fish you can with THAT pole.
For more information on what fish are caught with what pole, how much they weigh, what playgrounds they are more likely, and how many jellybeans you can expect to get, refer to Batleth's fishing guide. It's the most complete one so far:
