When you order the statue, you will be told what bean combo to use to plant it. You will not see a physical statue outside your house when you leave it. You will see what looks like a concrete pad. Walk up to the pad, and select the bean combo Clarabelle told you to use for the statue. You will then plant it like a flower and it should poof up right in front of you.
And yes, you can only have one. Have to remove any you might already have up.
