I've thought of what it might be like to have stripes and other marking for our toons - maybe unique to each species - like tabby cats or yeah, spots for dogs and other animals. Maybe you could make your horses look like kind of like zebras lol

Are toons human? No, they just have human characteristics. Do you see purple or pink cats, dogs or any other animal with most of the colors that are available on TT in RL? No, and we're supposed to have just as much fun making them as we are playing them. Why box yourself in like that? It's make believe - have fun with it! Use your imagination.
I won't speak for Disney, but IMO, they probably won't have this - at least not anytime soon - because they would have to have too many variations (i.e., jagged zig-zaggy stripes, straight stripes (horizontal/vertical/diagonal), round spots, irregularly shaped spots (like on cows), other patterns, etc.) especially if they did it by species. They would also have to give you the option to change the colors of these patterns to contrast with the main color of the toon and of course, since you can have your toons be up to three different colors - they would probably have to make it so that you can apply a different pattern to head, torso/arms, and legs (now THAT would be weird looking!).
